The Farmer

At the age of 17, Fredolino Lafranchi immigrated to America from Maggia, Switzerland, with the dream to one day own and operate his own dairy. In 1919 that dream became a reality when Fred and his wife Zelma Dolcini Lafranchi established the Lafranchi Dairy in Nicasio. Over time, their eldest son, Will, took over the family dairy. He visited their ancestral homeland a number of times and became enamored with the local, hand-made cheeses. Launching the Nicasio Valley Cheese Company brings to fruition a life-long dream of their father. At Nicasio Valley Cheese Company milking is finished by 6:30 a.m. each day, and the cheese making begins at 9 a.m. This ranch is pasture-based, with the dairy cows deriving their entire diet from grass grown on these organic pastures for a minimum of 120 days per year. Nicasio Valley Cheese Company is the California’s only certified organic farmstead cheesemakers.
